(the potatoes, carrots, garlic and onions were 8 hours in the crockpot, though, never fear.)

The corned beef creates more liquid, that’s why I don’t add too much more. But it truly doesn’t hurt to add more.

Water or other liquid should cover the meat by at least one inch. If I followed your recipe, part of my corned beef (under water) would be tender and the remaining part (above the water line) would be tough. Pots vary in size, this requirement does not. Just thought you’d like some feedback. Other than the water issue, it is a stellar recipe!

We can agree to disagree, most stove top recipes boil the corned beef to get that saltiness off, so rinsing well is a must. But of course you can do whatever you’de like.

2. The brisket should be placed on top of veggies. The only exception is cabbage which is added later.

I made this dish for the first time today. It is delicious! We like lots of veggies so I used a whole pound of carrots, two onions, and a whole head of cabbage in addition to the potatoes. I also used four garlic cloves. I waited to add the cabbage because we don’t like soggy cabbage. I cooked it for a total of 9 hours. The corned beef is tender and delicious. I will definitely make this again and again.

I just wish corned beef didn’t come with so much fat on it. I spent 20 minutes cutting off as much fat as I could before putting the meat in my slow cooker. That’s the only downside to making this dish.

If you cooked yours for 12 hours I don’t see how cooking using this recipe for 8 hours it would be done. I will try the 8 hours first since I don’t want to over cook everything.
