It’s as close as I can get to the authentic carbonara that I love from Original Joe’s on Broadway in San Francisco, CA without having to travel two hours from Sacramento, CA. I know it’s not the authentic – but so what. It’s easy and tastes great. So stop your grousing. If it’s not to your liking – then don’t comment. And yes, I agree with Cindy – you sound so very bitter. Even the Carbonara that the Olive Garden serves isn’t authentic, it’s a ravioli; and nether is the one from the Old Spaghetti Factory. So what?? It’s easy and can be cooked in a crock pot and families like it.

If you “hate to be that person” then why choose to be that person? Everyone who loves carbonara knows this is not authentic. It doesn’t claim to be, but it is a very good substitute and tastes VERY similar. Why it’s important to you to make the point you’re making when it actually benefits noone is curious.
