Sounds like you did not make this exact recipe. You left out the salt, pepper, onion powder and Italian seasoning, and added taco seasoning…. Changes are fine with me, but please don’t say you made the exact recipe!!!!!!

Hey Sarah! Try cooking it on high for 4 hours, that’s what I did and it came out perfect, the potatoes and carrots came out nice and soft.

I made this recipe tonight for dinner and using this exact recipe nothing extra added and nothing left out for myself and a group of my friends and we all loved it, came out amazing. Oh I did substitute the recipe seasonings for taco seasoning. So Good! Thanks for sharing.

Some brands aren’t good as a slow cooker function (they cook too low). You Could try cooking on high instead.

I have made this a couple of times, and it’s excellent tasting, but the potatoes and carrots are not soft. Almost to the point of being crispy.

I am using a Greenpan Slow Cooker that has a non stick metal pan (has a searing function) instead of the crock style insert. Is that my problem?

Otherwise I will go back to the Dutch Oven for this recipe.

I did like this but note a couple things – it needed another .5 – 1 cups of liquid, I used low sodium beef broth, also needed more garlic. I only had 4 medium sized red potatoes on hand but it was fine since the recipe didn’t use much liquid. I threw in a few rosemary sprigs so used half the oregano but next time would use maybe twice the oregano and use 1.5x the salt, the stew felt a little bland. Mine was done at the 5 – 6 hour mark on low. The potatoes and veggies were perfectly tender and the beef was good. Will make again just gotta tweak those things.

Since I didn’t want to dirty a pan just to transfer contents to my Crock Pot, I did the entire recipe on my stovetop and used ground turkey. I used (2) 14 oz. cans of reduced sodium beef broth instead of water. Other than browning the meat with the onion and adding garlic, it was just a dump, stir, and simmer recipe and smelled so good while simmering. I did add a handful of green peas at the last minute and used a slurry of cornstarch and water to thicken it. The tomato paste adds enough salt that no extra is needed. I added pepper and parsley at the last minute. Served this with a loaf of crusty French bread. Wonderful on a cold day.
